Cajun Chicken One Pot Pasta – Ultimate One Pot Comfort Food


Today I’m making my spicy Cajun chicken
pasta all cooked in one pot is ready in 35 minutes it’s a real winner for the
family dinner table and it saves on the washing up too. To start we’re going to add
a tablespoon of olive oil to a large pan over a medium heat. Then we’re going to add a diced white
onion to the pan and cook for five minutes stirring occasionally until the
onion softens. I’ve got two chicken breasts here that
I’ve cut into bite-sized chunks and over that I’m going to sprinkle a tablespoon
and a half of Cajun spice, give it a good mix to coat the chicken evenly then add
the chicken to the pan to cook for five to six minutes until the chicken is
sealed on all sides. Now add 75 grams or 2 and a half ounces
of chorizzo that’s been cut into chunks and 2 cloves of minced garlic and
cook for a further 2 minutes until the chorizzo starts to release its oils. Next we’re gonna add in some sliced
peppers I’m using half a red half a green and half a yellow pepper. Now I’m going to add in the dried pasta
I’m using 200 grams or seven ounces of rigatoni you can use spiralli or penne or
whatever you got in your store cupboard. Next in goes 400 grams or 14 ounces of
tinned chopped tomatoes, add in 480 mil or 2 cups of chicken stock,
hot water with a couple of stock cubes is fine. Bring to the boil stir then
place a lid or some foil over the pan turn down the heat and let the pasta
simmer for 15 minutes. Check and stir a couple of times during cooking. After 15 minutes remove the lid and test the pasta, it should be just cooked if it
isn’t quite there just give it another couple of minutes, perfect. Stir in 90 mil or a third of a cup of double or heavy cream, heat through for a
minute then turn off the heat and stir in a large handful of baby spinach
it should wilt very quickly. Remove from the heat and add 10 to 12
sliced cherry tomatoes and a sprinkling of cheddar cheese and parsley. That’s my Cajun chicken pasta all
cooked in one pot for a quick weeknight family meal.
