Let’s make prawn saganaki with ouzo! Heat the olive oil in a big frying pan. Peel the onion and cut it in thin slices. Drain the cloves of garlic and cut them in slices. Add the onion and the garlic and sauté for 5-6 minutes until they soften. Add the prawns and sauté for 2-3 minutes until they are golden brown. Pour in the ouzo and wait for 1 minute until the alcohol evaporates. Add the fresh tomato sauce, the salt, the pepper and the tarragon. Stir together and cook for another 10-15 minutes. 2-3 minutes before the end of the cooking process, crumb up the feta cheese using your hands. Wait for 5 minutes so that the prawn saganaki cools off and then serve.
